Saus is an original appetizer for parities only in Panama Colon. It is made with pig feet, cucumber, onions, peppers and Cilantro. First we take out the hair from the pig feet. Then after taking out all the hair you wash it with lemon and vinegar. After you wash the pig feet good you put it in a pot with water, garlic, pepper, culantro, Cilantro and enough salt. You have to keep it boiling until the pig feet is very soft. Then get a bucket, and inside the bucket you're going to put sliced up cucumber and onion with vinegar. Then you take the pig feet from the boiling water, and place them inside the bucket with the cucumber, onions and vinegar. You must also add the water you used to boil the pig feet inside the bucket to mix with the vinegar and the other ingredients. After that you must cut up some spice pepper and put it inside to give it flavor and add some more salt not too much just enough to give it a little more flavor. Whenever there's a party that includes most of my family from my mom side come together, My mother is always the one that cooks and make the Saus because she's the only one in the family that can make it taste good. Yes it may taste sour because of the vinegar and spice because of the pepper but the other ingredients makes it taste so good that you just end up ignoring the sourness and spiciness.
